16 ounces boneless chicken breasts sliced in half
4 tablespoons olive oil divided
1 tablespoon smoked paprika
4 cloves garlic, crushed and divided
1 tablespoon Dijon mustard
1 tablespoon freshly squeezed lemon juice
2 teaspoons kosher salt divided
1/2 teaspoon black pepper
5 medium yukon gold potatoes, diced
1 medium sweet potato, diced
1 medium sweet onion, sliced
- Preheat oven to 425 degrees F. Place vegetables on a large sheet pan. Drizzle with 2 tablespoons olive oil, sprinkle with 1 teaspoon garlic, salt and fresh cracked black pepper. Toss until everything is coated.
